I mean, that’s what I discovered recently on a Siem Reap cooking class that also included a neat market visit.

Setting the Stage: More Than Just a Meal

The idea was very simple: learn to cook some real Cambodian food. But this, like your typical cooking class, turned out to be way more. You see, it started with a trip to the local market. It’s almost sensory overload – and in a good way, I think! Think, colors bursting from every stall, the lively chatter of vendors, plus scents you can’t even start to place that sort of all combine to hit you at once. It’s incredibly exciting.

Walking through the market, it’s easy to start to feel more connected to the source of your food. That’s kind of special. And getting to talk to some of the people selling everything was great, too. You learn so much more about daily life, the specific stuff that makes Cambodian dishes unique. From the specific types of local greens that make up the fresh cuisine of the country, to the stories about which vendors bring the best deals.

Our guide, his information was super impressive actually, he walked us past these towering piles of lemongrass and galangal. We stopped too, to handle vibrant, unfamiliar vegetables I couldn’t even name. As a matter of fact he helped us select just the perfect ingredients, too, he wasn’t just buying for the class, yet he was offering real insights into what to search for, what to avoid, like the stuff that separates average from great. The cooking school setup? Very inviting, I must admit! Basically it had these open-air workstations surrounding a main demo area. It gave everyone the chance to see and jump in at the appropriate times. We did everything in a fun, interactive way. The chef started off by demonstrating each step of the recipes we would make, very clearly, with great attention to detail, I should note. Also he threw in stories, little local tips here and there, that I just found fascinating. So you knew more about not only how, yet also the why behind all these classic Khmer recipes.

Then came the fun part—getting hands-on with the ingredients. Honestly I’m the kind of guy who isn’t the most skilled cook at the best of times. However, following his steps and with everything measured out, in front of you, you feel much more prepared to give it your best effort, to try and reach at least a passing grade! We were carefully chopping vegetables. That lemongrass? Apparently, that’s a lot tougher than you’d expect! Next up was grinding spices into fragrant pastes, mixing ingredients by hand, smelling this rich perfume as these unfamiliar pastes rose from our pestle-ground labor of love! Pretty quickly it turned into more than just following recipes, yet connecting with the process, in a way. You start getting into how certain smells combine with other ingredients, and you begin, at least vaguely, to start figuring out the ways that true masters have crafted a truly wonderful cuisine over countless generations.

The dishes we tackled were absolutely the greatest of Cambodian cuisine, of course! Amok (fish cooked in coconut milk). Khmer curry. Oh and spring rolls where we had to wrap our own filling. Now wrapping spring rolls neatly isn’t really as simple as it seems you, like your folding the wrapping paper to create your gifts on Christmas mornings. (You end up with more that needs practice that’s for certain). But that only contributed to the general feeling of fun in this unique context. And also everyone, no matter how useless at cooking (me!), could get involved, get some real fun. Very soon the space around us was this blend of controlled frenzy, punctuated by laughter as various cooking disasters threatened to erupt here, there and everywhere. A learning atmosphere? Actually, that’s undeniable.

Tasting the Fruits (and Vegetables) of Our Labor

After all of our effort in making all sorts of Cambodian cuisine dishes from raw products, there was finally the most anticipated stage: tasting! The best part of all this? Enjoying what we had created, too. You get to sit with all the other class members. Now that’s a really wonderful and valuable time where stories can be exchanged and new friendships kindled, for all of us. Each dish turned out distinct, not quite excellent of course, there was a wide variety of skill levels you understand, however genuinely good. This was, no doubt, something that we ourselves cooked (some help allowed!). With all sorts of traditional sides, the incredible coconut rice, we ate every morsel to satiation. Also with no guilt at the gluttony due to the earlier efforts to prepare them all!

But the great thing was, each of us got the opportunity to sample everyone else’s versions, too, of each dish. To get that comparison for real, no matter how imperfect these first attempts actually were. Now in that way, we were capable to take our cooking from the “merely adequate” to “wow, that’s genuinely delicious, and maybe even good enough that I’m now prepared to prepare this at home too, after all this knowledge acquired.” This whole shared dining thing? Absolutely an unforgettable experience and also the most satisfying section, naturally. Because everyone could compare and contrast the recipes, figure out how to adapt them, and share stories of the effort to achieve excellence. All round, something you certainly don’t typically get from dining out at all, or buying processed groceries from any supermarket back home!

Cultural Immersion Through Cuisine

More than really picking up cooking skills, I feel, anyway, is that a day like this cooking class offers real cultural insights. Preparing all of the iconic national meals from ground zero, right where the experts prepare it, too, provided me with this special appreciation for Khmer heritage and way of life. Food? That’s way more than fuel, it’s a kind of cultural adhesive which really brings the families of this wonderful and varied population all over this land all the closer, actually. I mean you notice the way certain recipes, for instance, tend to be safeguarded, or transferred, through these close-knit generations. As the chefs were sharing so many of the dishes and the stories around them, I came to recognize the depth to that all really means to a Cambodian family.

What’s created wasn’t just tasty, yet something more authentic and deeper. Basically, it was educational and very hands-on.
